Palak Dosa

Dosa's now a day’s come in so many varieties that I have lost the count. But yes the last time I remember my mom in law telling me about a guy who makes this amazing Schezwan dosa in the neighbourhood! It left me thinking how far our humble south Indian breakfast dish has travelled... and yes many more miles to go...!

Everyone loves it and this recipe here is as my mom in law makes it.. I had to make this last Sunday for maa da laadlaa!! - my hubby :)

Palak Dosa with Red coconut chutney

Ingredients for Palak Dosa:
  • Palak - 1 cup or half bunch
  • Besan - 1/2 cup
  • Rice Flour -1/2 cup
  • Ginger - 1 small piece
  • Green Chilli - 3-4
  • Cumin powder - 1/2 tbsp
  • Salt as per taste
  • Water
Method:
  • Mix together all the ingredients above in a food processor with water (as per the consistency required) and blend well like a dosa batter
  • Heat the pan and spread it over
  • Turn when done and cook both sides well
Red coconut chutney

Ingredients:
  • freshly grated coconut - 1 cup
  • red chilli - 2 nos
  • ginger - small piece
  • Salt as per required
For tadka :
  • oil - 1tbsp
  • mustard seeds - 1/2 tbsp
  • curry leaves - 1 string
Method:
  • Take coconut , red chilli , ginger and salt add water and grind well in a mixer till a paste like consistency
  • Heat oil in a pan
  • Add mustard seeds and when they pop add the curry leaves to this add the mixture right from the jar and stir well.
  • Check for salt
Palak dosa with red coconut chutney ready! This is what i like about Indian food its so colourfull and vibrant!

Crispy Potato Wegdes - Indian Style!

Lets face it people.. tasty food is fatty! so there is no running away from food.. right?? well i will die if i can't have my favourite food and potato chips or fries uuummmm... i love them. But at the same time you need to watch the needles of the scale tooo..

So here it is a crispy spicy potato wedges for anyone who loves potatoes and still doesn't want to feel guilty for eating fried food :)

I have added indian spices to it and have them cut into thin slices (See Pic above). and what more do you need its not fried and skins left on the potato. So very good as a part of your daily carb's in your diet!

Wedges are a healthy snack but for those who want indulge a little you can sprinkle some grated cheese over it , i guess this will be a hit with kids. Like my husband says "Hit hai boss" after every new dish i try comes out good :)

Crispy Potato Wedges -Indian Style!

Ingredients:
  • Two Potatoes - Washed and dried
  • 1/2 tbsp turmeric powder
  • 1/2 tbsp red chilli powder
  • 2 tbsp dried oregano
  • 1 tbsp olive oil
  • salt - as per your taste

Method:
  • Cut the potato into desired shapes but make sure that the slices are thin otherwise you wont get the cripsy feel.
  • take a mixing bowl and then add the above ingredients and mix well.
  • Check for salt
  • Preheat the grill at 200 C
  • Place the potato wedges on the tray and leave it for 20 - 25 mins
  • Check in between and do turn sides if needed
There it is cripsy potato wegdes ready !! this is also a quick starters!
